Polenta (fine) 100g
Cornmeal with yellow yolk-like colour, slightly sweet in flavour, has its origins in Northern Italy and it was known as a pheasant food. It can be cooked into the creamy and thick texture and substitute for pasta, rice or potatoes. It can be allowed to set and then sliced used as bread. Uncooked polenta makes a great gluten-free alternative to flour in cakes that tend to be moist and dense with a pleasantly grainy texture or used as an alternative to breadcrumbs when frying.
